Updated 2022: Grapes have been re-tested by Monash University and found to be high FODMAP. I have therefore reduced the quantity used in this recipe to ensure it remains low FODMAP (6 grapes or 32g per portion is the green limit).
This idea for a low FODMAP festive stuffing is based on one of my favourite Delia recipes Roast Chicken with Grape and Herb Stuffing. The original recipe is definitely high FODMAP being based on breadcrumbs with lots of garlic and onion but it’s quite easy to make it low FODMAP and add a festive twist. Using breadcrumbs instead of sausage meat means that it’s also suitable for vegetarians if you bake it separately rather than stuffed in your turkey or chicken, however cooking it this way doesn’t give quite the same flavour. The fresh, gluten free breadcrumbs are really simple to make by blitzing a few slices of gluten free bread in the food processor and is a great way of using up stale bread. I often blitz leftover bread then bag and freeze it to use as a breadcrumb coating for fish or chicken.

- 120g seedless green grapes, halved
- 100g (1½ cups) fresh gluten free breadcrumbs (check ingredients to ensure no added apple/pear/fruit juice concentrate)
- 100g (1/3 cup) cooked chestnuts, roughly chopped into small pieces
- 4 tablespoons garlic flavoured olive oil
- A large handful of chives, finely chopped
- A handful of parsley, finely chopped
- Salt and pepper to season
- Place all of the ingredients in a large bowl, season well and mix together
- Use the mixture as a stuffing for your turkey or chicken (adjust cooking time accordingly)
- Alternatively transfer mixture to a medium sized oven proof dish, cover with foil and bake it for 30 minutes at 180 degrees C (gas 4, 350F), remove the foil and cook uncovered for a further 15 minutes then serve as an accompaniment to your festive meal

Going low fodmap has made a HUGE difference to my hubby and your recipes have made it much easier!
Very excited about this stuffing – thought he’d have to go without on Christmas Day.
One question – should the chestnuts be raw or pre-cooked?
