This is such a simple low FODMAP week night dish, easy to do after work and always popular with the kids. It’s great because you just heat the oven, put all the ingredients onto one large tray and pop it in the oven for about 45 minutes, giving it a shake half way through and that’s it. I like to serve it with some wilted spinach flavoured with a sprinkle of nutmeg.

Easy Chicken and Roast Potatoes

An easy, one tray chicken and roast potato dish.
Ingredients
- 8 small chicken thighs or drumsticks (allowing 2 per person, depending on size)
- 12-16 new potatoes (smallish ones)
- 2 tablespoons garlic flavoured oil
- A small handful of fresh thyme leaves (rosemary or sage leaves would also work well)
- Juice and grated rind of 1 lemon
- A good pinch of salt and pepper to season
Instructions
- Preheat the oven to 180c (fan oven), 400f, gas 6
- Make a few small slits in the chicken thighs or drumsticks
- Place the chicken and potatoes together on a large baking tray
- Add the lemon juice, garlic oil, herbs, salt and pepper and mix it thoroughly together with the chicken and potatoes
- Roast in the oven for 45 minutes, turning halfway through, until the chicken in cooked through and the potatoes are soft and golden.
- Serve with suitable vegetables or a simple green salad

Followed the recipe but the cook time was off. Cooked at 360 F° for 1 hour and chicken is not cooked and potatoes are hard. Help…

Hi Erika, sorry to hear about your problems with the recipe. I had a look at the post and I will update the oven temperature guide, I said 180c which is fan oven temp so this would be equivalent to 400f and would explain your problems. I will update it, Best wishes, Louisa
