Aubergines are one of my favourite vegetables. I’m so glad they’re allowed on the low FODMAP diet, I’m going to enjoy experimenting with aubergine recipes for this blog. This is such an easy one to try if you’re having a barbecue, not much preparation, really tasty. The aubergine slices can also be cooked on griddle pan, turning a couple of times to give a nice criss cross pattern.
Barbecued Aubergine Slices

A simple, tasty, barbecued aubergine recipe, full of summer flavour.
Ingredients
- 1 medium aubergine cut into 1cm round slices
- 2 tbsp garlic oil + extra for coating slices
- 1 tbsp lemon juice
- ½ tsp Dijon mustard
- A small handful of fresh basil roughly chopped
- A pinch of sugar
- Salt and pepper to season
Instructions
- Coat the aubergine slices in a little garlic oil
- Combine the rest of the ingredients in a medium bowl and set aside
- Grill the aubergines on the barbecue, turning a couple of times during cooking to get a nice criss cross pattern
- Once browned and soft, take the aubergine slices off the barbecue and place them in the bowl with the marinade tossing them around then serve.

Sorry, I just figured out that Aubergine = eggplant, which is a big NO on my FODMAP list ?

Hi Brittney, that’s right Aubergine and Eggplant are the same. It is a low FODMAP food, I always check the Monash University Low FODMAP app which is a great resource. However I know from my own patients that there are foods they don’t tolerate for another reason even though they are are low FODMAP. Best wishes, Louisa
