This is the new favourite snack in our house right now. It’s addictively good, very easy and quick to make and also happens to be low FODMAP. I’ve specified pure maple syrup as some of the cheaper maple style syrups contain added fructose or “sugars from fruit” as I saw on one label. You can substitute the maple syrup with golden syrup if you prefer and it works just as well although the paste is a bit thicker and not quite so easy to coat the popcorn with.

A very tasty and simple to make snack
Ingredients
- 50g popping corn
- 2 tablespoons vegetable oil (I use rapeseed)
- 1 tablespoon pure maple syrup
- 1 heaped teaspoon smoked paprika
- A pinch of salt
Instructions
- Place the popping corn and 1 tablespoon of oil into a medium size pan (use a larger pan than you think you will need as it will be easier to mix the popcorn together with the paste at the end)
- Put it on a medium heat and cover with a lid
- Once most of the corn has popped (takes 2-3 minutes) and popping sounds are about 3 seconds apart take the pan off the heat
- Meanwhile mix the remaining tablespoon of oil into a paste with the maple syrup, smoked paprika and pinch of salt
- Drizzle the mixture over the warm popcorn and stir well until all the corn is evenly coated then transfer to a bowl and serve
