Breakfast on Sundays in our house is almost always pancakes. This is this recipe I use most often and I think it works really well with gluten free flour to make it low FODMAP. The end result is lighter than when using wheat flour and it’s very moreish. I originally learnt to make pancakes when I worked as a kitchen assistant in a fishing lodge during my school summer holidays. I was in charge of making afternoon tea for the guests which involved baking a fancy cake and either a large batch of pancakes or scones. I kept a note of all my favourite recipes while I was there and still regularly refer to them. This is the Grimersta Lodge pancake recipe with a couple of small changes to make it suitable for a low FODMAP diet, enjoy.

- 180g gluten free self raising flour (i use Doves Farm -the self raising mix has added xantham gum which makes all the difference to the texture of these pancakes)
- 1 level tsp baking powder
- 1 medium egg
- 1 tablespoon maple syrup
- 150ml lactose free milk (note that you may need to add a little more to get the batter to a dropping consistency)
- Place the dry ingredients in a large bowl, mix them and make a well in the middle
- Add the syrup, egg and milk and beat together for about a minute - I use a hand mixer
- Check the consistency, if it's too thick add a bit more milk and mix. It should be dropping consistency where it falls off the spoon with some reluctance
- Heat a pancake skillet or frying pan on a low heat and drop approximately 1 tablespoon of batter per pancake onto the skillet, I normally do 3 or 4 at a time. Turn once you see bubbles forming on top (about a minute) and cook for a further minute on the other side.
- Once cooked, they don't keep well and are best eaten straight away
- It makes approximately 18 pancakes
- Note- I tend not to add any butter to the pan when cooking pancakes, I think you get a better looking pancake and as the pan I use is non stick the butter is really not necessary. However if your pan is not non-stick then use a little butter to grease it.

i will never buy prepared pancake mix again. I liked that it only makes about 9 small pancakes, alot of the recipes make too much batter for us. The first time i made these i followed the recipe exactly and they were delish. this time i didnt have any milk so i used water instead, it wasnt as good but it worked! I’ve made them with plain flour instead of self raising and have not used golden syrup a couple of times and they’ve still been really tasty. 🙂

Thanks for the pancake recipe. I’ve made them several times over the Christmas/New Year break and everyone has enjoyed them. For a change I wondered about trying them with orange juice instead of milk or including blueberries. I’ll let you know how I get on.
