100g (1½ cups) fresh gluten free breadcrumbs (check ingredients to ensure no added apple/pear/fruit juice concentrate)
100g (1/3 cup) cooked chestnuts, roughly chopped into small pieces
4 tablespoons garlic flavoured olive oil
A large handful of chives, finely chopped
A handful of parsley, finely chopped
Salt and pepper to season
Instructions
Place all of the ingredients in a large bowl, season well and mix together
Use the mixture as a stuffing for your turkey or chicken (adjust cooking time accordingly)
Alternatively transfer mixture to a medium sized oven proof dish, cover with foil and bake it for 30 minutes at 180 degrees C (gas 4, 350F), remove the foil and cook uncovered for a further 15 minutes then serve as an accompaniment to your festive meal
