Place the vegetable oil and popping corn into a medium size pan, cover with a lid and put it on a medium heat
Once most of the corn has popped (takes 2-3 minutes) and popping sounds are about 3 seconds apart, take the pan off the heat and wait for popping to cease
Stir through half of the parmesan and chives, then season with salt and pepper
Transfer to a serving bowl and top with the remaining parmesan and chives
