Low FODMAP Banana and Blueberry Bread

Low FODMAP banana bread with added blueberries
Ingredients
  • 3 firm bananas
  • 200g gluten free self raising flour mix (I used Doves Farm)
  • 100g butter, cubed
  • 70g caster sugar
  • 2 large eggs
  • 100g fresh blueberries
Instructions
  1. Preheat the over to 180 degrees C then grease and line a 2lb loaf tin with baking parchment
  2. Mash the bananas together in a bowl and set aside
  3. Place the flour, butter, sugar and eggs into a large bowl and use an electric mixer to cream together until thoroughly combined
  4. Stir the mashed banana through the mixture then gently fold in the blueberries
  5. Transfer the cake mix into the prepared tin and bake for 50 minutes (check it's ready by piercing the centre of the cake with a skewer - if it comes out clean then the cake is ready)
  6. Cool in the tin for a few minutes then turn it out onto a wire rack and allow to cool completely
