Cranberry and Oat Flapjacks

Low FODMAP

An easy, low FODMAP cranberry and oat flapjack. Great as a mid afternoon snack when you need something to keep you going until dinner.
Ingredients
  • 50g butter
  • 40g golden syrup (this quantity of golden syrup would be low FODMAP when divided into 8 portions but you could substitute maple syrup to reduce the FODMAP content further if you prefer)
  • 40g soft brown sugar
  • 150g rolled oats
  • 25g (2 tablespoons) dried cranberries
Instructions
  1. Preheat the oven to 170 degrees and line a small loaf tin with baking parchment
  2. Melt the butter, sugar and syrup together in a small pan on a low heat
  3. Stir in the oats and cranberries
  4. Press the mixture firmly into the tin and bake for 20 minutes until lightly golden on top
  5. Allow to cool and cut into 8 small fingers
