Barbecued Aubergine Slices

A simple, tasty, barbecued aubergine recipe, full of summer flavour.
Ingredients
  • 1 medium aubergine cut into 1cm round slices
  • 2 tbsp garlic oil + extra for coating slices
  • 1 tbsp lemon juice
  • ½ tsp Dijon mustard
  • A small handful of fresh basil roughly chopped
  • A pinch of sugar
  • Salt and pepper to season
Instructions
  1. Coat the aubergine slices in a little garlic oil
  2. Combine the rest of the ingredients in a medium bowl and set aside
  3. Grill the aubergines on the barbecue, turning a couple of times during cooking to get a nice criss cross pattern
  4. Once browned and soft, take the aubergine slices off the barbecue and place them in the bowl with the marinade tossing them around then serve.
