Quick Courgette Salad

A really healthy, quick and easy, low FODMAP snack
Ingredients
  • 1 tablespoon pumpkin seeds
  • 1 small courgette, washed and ends cut off
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • a pinch of salt and pepper
Instructions
  1. Place the pumpkin seeds in a small frying pan on a high heat
  2. Once they start to pop, remove the pan from the heat and allow them to cool slightly
  3. Meanwhile coarsely grate the courgette into a small bowl
  4. Drizzle the olive oil and balsamic vinegar over the courgette, add a little pinch of salt and pepper and top with the toasted pumpkin seeds
