Oat Flour Soda Bread

A quick and easy recipe for a low FODMAP oat flour bread.
Ingredients
  • 200g rolled oats
  • 100g gluten free plain flour (I use Doves Farm plain flour mix)
  • 1 tablespoon linseeds
  • 2 teaspoons xantham gum
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 1 desert spoon soft brown sugar
  • 250ml lactose free milk
  • 1 tablespoon white wine vinegar
  • 1 medium egg
Instructions
  1. Preheat the oven to 200 degrees (fan oven) and put a baking tray in to warm
  2. Place the oats into a food processor and switch it onto a high speed setting for about a minute until the oats resemble a fine flour
  3. Mix the dry ingredients, including the oat flour, together in a large bowl and make a well in the centre
  4. Using a fork, lightly whisk the egg into the milk and add the vinegar
  5. Mix the liquid into the dry ingredients, it should form a soft sticky dough
  6. Take the heated baking tray out of the oven and lightly grease with a little oil
  7. Place the dough onto the baking tray and roughly shape into a slightly flattened ball, then use a knife to score the top with a cross shape
  8. Bake in the oven for 35 minutes until it is golden brown
  9. Place the bread onto a wire rack to cool before cutting
